The Eponymous Food Organisation was founded by Raoul de Strang in 1904 to protect signature dishes of professional chefs from imitators. The EFO has become the leading culinary institution in the world. To have one’s dish accepted by the Eponymous Food Organisation is the ultimate accolade for any chef. The EFO is the final authority on named dishes. For lovers of fine food, our annal is the bible. If for instance, there is a dispute about whether or not there should be anchovies in a Caesar salad, consult the EFO manual. Any chef worth his salt seeks to be included in the EFO annal. De Strang himself remained Escoffier’s sous-chef all his life. Though he would often be seen bending over a hot stove all night long throwing ingredients into a pot like an alchemist, he produced nothing name worthy. It is said he died choking on a piece of Melba toast. |
